Making tofu

Making Tofu is amazingly easy and simple, but I didn't know this until I decided to make it.

My mom told that I need soya and a sort of chemical(eatable), it calls(is called) "lu shui 卤水" in Chinese but I didn't(couldn't) figure out its English name. Even in China it is not easy to find "lushui" if you are not a tofu maker, no mention(not to mention how hard) it is in Sweden where people do not eat tofu and some people are even allergy(allergic) to it. (真的??)

I searched online and finally found(I had) a surprise: (there are) several substitutes of "lushui"! they are agar, gelatin and.....um, the first two you can easily find in a western supermarket, but agar is very expensive and gelatin is made from animal bone. I'm not a vegetarian but tofu belongs to vega(vegetarian) food, so that's(it would not be) not pure if using gelatin. But finally I found a video on youtube and it was(with) a man making tofu with vinegar! Why didn't I find this video at(in) the beginning!(?)

So, first step, soya powder+ water(1:4), boiling(boil) them for 3 minutes, then turn off the iron(heat). Second, wait until it becomes colder at the temperature between(the temperature is between) 85℃-90℃. This is hard to control since we don't(didn't) have some(any type of) measurement (tool), don't test by hand(with your hands) it is dangerous...according to the video, 5-6 minutes after boiling the soya soup would be about that temperature. And also the video says(said) the temperature is the key to success of making tofu.

Third, vinegar! Add vinegar with measurement or just a big spoon, step by step, do not add too much at once. You will see the soup become(becoming) stick(y), then (to=delete) solid( if it is perfect).

Last step is easy, prepare a bow(l)/container and a cloth which can well cover the bow against the inside of the bow(what does this mean? Which can cover the inside of the bowl well?), and it will be perfect with very tiny holes which (are) used to filter the water but not (the) soya. Water the cloth, and slowly pour the well-done soya on to the cloth...Then filter (the) water by hand and put (the) tofu into a lovely container, (and) if you like, shape it (in)to a solid cube and put it in the fridge:)

Notably=delete, if you want to have soft tofu, try to keep more water when you (are) filtering. And don't add too much vinegar because I made such a(this) mistake:P
